Our Inauguarl Bacio is made from Sauvignon Blanc from Los Olivos in Santa Barbara County. The wine is 100% natural with nothing added. It underwent weekly batonnage for the entire time in barrels. Sauvignon Blanc will compose 75% of the blend. The balance will be Vernaccia di San Gimignano from Campochiarenti Winery in Tuscany. It was fermented at the winery in Italy where it also went thru extensive batonnage. The Italian Vernaccia was in stainless steel barrels that were made especially for this wine and then shipped to the United States in May of 2020.
The final blend will be bottled in June or July by Erich Russell in Paso Robles, California.
